Enjoy this full of flavour soup, ready in no time!

2 Tbsp oil
1 tsp cumin seeds
1 onion, finely chopped
1 clove garlic, crushed
1 tsp chilli paste
1 tsp ground cumin
1 tsp coriander
1/2 tsp tumeric
1/2 cup red lentils
1.2kg of tomatoes (OR 2 x jar passata OR 3 x 400gm tins)

In a large saucepan heat the oil and saute the cumin seeds until fragrant. 

Add the onion, garlic, chilli paste, cumin, coriander and tumeric.

Fry gently for a couple of minutes. Add the lentils and the tomatoes. Simmer for a further 15 minutes until the lentils are cooked.

Vegetables or stock may be added to suit your taste.
